沖繩黑糖炒番薯南瓜絲
Kinpira Sweet Potato & Pumpkin with Brown Sugar

Berry Waffles

Ingredients:

番薯 200g

南瓜 100g

麻油 1湯匙

沖繩黑糖粉 2湯匙

醬油 2湯匙

芝麻 少許


200g sweet potato

100g pumpkin

1 tablespoon sesame oil

2 tablespoon Okinawa brown sugar powder

2 tablespoon soy sauce

Sesame seeds optional


Steps:

  1. 番薯連皮切成長約5cm,闊約5-6mm的細絲,再用水沖洗約10分鐘。

  2. 除去南瓜的籽和內膜後,將南瓜連皮切成長約5cm,闊約5-6mm的細絲。

  3. 在煎鑊中加入麻油,油熱後加入已去除多餘水份的番薯絲和南瓜絲炒。

  4. 番薯絲和南瓜絲炒熟後,加入沖繩黑糖粉和醬油拌勻。

  5. 上碟後再撒上芝麻,即可享用。



  1. Cut the sweet potato into 5 cm long, 5-6 mm thick strips with the skin on, and soak them in water for about 10 minutes.

  2. Remove the seeds and the guts of the pumpkin and cut it into 5 cm long, 5-6 mm thick pieces with the skin on.

  3. Properly drain the water off the vegetables. Heat the sesame oil in a frying pan and quickly fry the sweet potato and pumpkin.

  4. When the vegetables are cooked, add the Okinawa brown sugar powder and soy sauce and mix.

  5. Sprinkle on the sesame seeds to finish off.


相比起白砂糖,沖繩黑糖含有含有鈣、鉀、鐵等礦物質以及維他命B1、B2和氨基酸等。鉀能夠排出體內多餘的鹽分,保持血壓正常。鈣能預防高血壓、動脈硬化和骨質疏鬆症,安定焦躁情緒等。
