Shikuwasa Recipe

沖繩香檸汁煎雞髀肉
Pan-fried Chicken Steak with Shikuwasa Sauce

Berry Waffles

Ingredients:

雞髀肉 2件(約500g)


【醬汁】

沖繩香檸汁 1湯匙

牛油 20g

砂糖 2茶匙

豉油 1茶匙


【配菜】

生菜 適量

車厘茄 適量

沖繩香檸 1個

鹽、胡椒、橄欖油 適量



2 chicken thighs (about 500g)


【Sauce】

1 tablespoon shikuwasa juice

20g butter

2 teaspoon sugar

1 teaspoon soy sauce


【Side vegetables】

Lettuce (appropriate amount)

Cherry tomato (appropriate amount)

1 shikuwasa

Salt, pepper, olive oil (appropriate amount)


Steps:

  1. 將雞髀肉切成均等厚薄,加入少量鹽和胡椒粉調味。

  2. 加橄欖油入鑊中加熱,放入①準備好的雞髀肉,雞皮向下用大火煎3-4分鐘,然後翻面再用中火煎3分鐘。煎好的雞髀肉放入碗中。

  3. 抹走鑊中的油,將牛油放入鑊中用細火溶解,加入糖、沖繩香檸汁和豉油,煮滾成為芡。

  4. 在碟中放入煎好的雞髀肉,再加入切成容易食用大小的配菜和切開一半的沖繩香檸,均勻淋上③的芡。



  1. Make the chicken thighs into even thickness, then season them lightly with salt and pepper.

  2. Heat olive oil in a frying pan and cook the chicken thighs from ① with the skin facing down over high heat for 3 to 4 minutes, then flip and cook over medium heat for another 3 minutes. When done, transfer to a plate.

  3. Wipe out the fat in the pan, melt the butter over low heat, add the sugar, shikuwasa juice, and soy sauce, and bring to a simmer to make the sauce.

  4. Place the vegetables and shikuwasa on the plate with the chicken thighs and drizzle the sauce from ③ over the chicken.
