Spicy Purple Sweet Potato French Fries

Berry Waffles

材料 | Ingredients: 

沖繩紫薯 2條(350g)

蛋黃醬 4湯匙

鹽 1撮

清湯粉 1/2茶匙

印度綜合香料 1/2茶匙

孜然粉 適量

乾燥香草粉 適量



2 (350g) Okinawa purple sweet potatoes

4 tablespoon mayonnaise

2 pinch salt

1/2 teaspoon soup stock powder

1/2 teaspoon or more garam masala

Cumin (appropriate amount)

Dry herb (appropriate amount)

步驟 | Steps:

  1. 仔細清洗沖繩紫薯,然後去除出芽的部分,連皮切成條狀或片狀,用水沖洗後備用。

  2. 將①的紫薯放入耐熱容器中,容器用保鮮紙覆蓋後用600w的微波爐加熱約10分鐘。待餘熱去除後,倒入蛋黃醬拌勻。

  3. 在焗盤上鋪上牛油紙,放上②的紫薯,再放入已預熱成190℃的焗爐中焗5分鐘,然後反轉紫薯片再焗5分鐘,直至兩面都焗至上色後取出。

  4. 在紫薯片上撒上鹽和清湯粉拌勻,再撒上印度綜合香料、孜然粉和乾燥香草粉拌勻。



  1. Wash the pueple sweet potatoes thoroughly, remove the sprouts, cut them into wedges with the skin on, and let them soak in water.

  2. Put ① in a heatproof container, cover lightly with a piece of plastic wrap, and microwave at 600w for about 10 minutes. Once cooled down, add mayonnaise and mix.

  3. Spread a piece of parchment paper on a baking pan, place ② on the sheet and bake in the preheated oven for 5 minutes, turn over and bake for another 5 minutes. When both sides are browned, remove from the oven.

  4. Mix in the salt and soup stock powder, and then add garam masala, cumin, and dry herb and mix.

*Preheat the oven at 190℃.


沖繩紫薯含有豐富的花青素、β-胡蘿蔔素、維他命C、鉀和食物纖維。花青素帶有抗氧化能力,可防止衰老,亦可減少患有心血管疾病等都市病的機會。沖繩紫薯對於繁忙的都是人來說,是一種不錯的食材。

8月至1月出產的沖繩紫薯的皮中更含有綠原酸,把紫薯皮仔細地洗乾淨後,再連皮吃的話,能吸收更多的營養。
